Pink sparkling wine
Region: Loire Valley
Appellation: AOC Touraine
Grape: 100% Gamay, Pétillant rosé
A playful, low-intervention sparkling rosé from one of the Loire's most respected domaines. Bone dry, bright, and built for the aperitif hour.
Domaine de la Taille aux Loups was founded in 1989 by Jacky Blot, a grower whose pioneering approach reshaped how the Loire Valley thinks about chenin blanc, favouring purity of terroir over convention. His son Jean-Philippe gradually took over direction of the domaine in the years before Jacky's death in May 2023. millesima
The estate farms clay and limestone soils across the Loire, and this cuvée, Triple Zéro, takes its name quite literally. There is no chaptalisation, no liqueur de tirage, and no liqueur d'expedition added at any stage. Everything in the glass comes from the grapes and time alone.
The grapes are hand harvested and sorted, then pressed gently and filled by gravity into barrels that are six to eight years old. Fermentation runs slow, three to four months, with no added yeast and no chaptalisation. The wine is bottled while fermentation is still working, with around 12 grams of sugar left to ferment, which is what gives the wine its gentle, natural sparkle. It then rests on its lees in bottle for eighteen to twenty four months before disgorgement.
Tasting notes:
Bright cherry and blood orange, with a lifted, precise finish carrying a touch of bergamot. Light on its feet but well defined, this is a wine that drinks with real freshness. Best enjoyed now while that vitality is at its peak.
