There is no chaptalisation, no liqueur de tirage, and no liqueur d'expedition added at any stage. Everything in the glass comes from the grapes and time alone.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003eThe grapes are hand harvested and sorted, then pressed gently and filled by gravity into barrels that are six to eight years old. Fermentation runs slow, three to four months, with no added yeast and no chaptalisation. The wine is bottled while fermentation is still working, with around 12 grams of sugar left to ferment, which is what gives the wine its gentle, natural sparkle.
