White wine
Region: Burgundy
Appellation: Vin de France
Grape: Aligoté
This cuvée comes from five exceptional plots planted between 1934 and 1953: Le Clou (1934), Les Tilles (1935, 1948, 1953), Egoulotte (1945) and En La Croix (1953). These vines, now over 60 years old, are rooted in shallow clay-calcareous soils, delivering concentration and natural tension.
Claire practices certified organic and sustainable viticulture, with no chemicals used in either vineyard or cellar. Yields are intentionally kept low, and every harvest is done by hand at optimal ripeness.
In the winery, the grapes are gently whole-bunch pressed before spontaneous fermentation begins with indigenous yeasts. Both alcoholic and malolactic fermentations occur naturally. The wine is then aged for a minimum of 12 months on its lees, building texture and complexity while preserving freshness.
