White wine
Region: Loire Valley
Appellation: Menetou-Salon
Grape: 100% Sauvignon Blanc
Planted in the 1960s, this parcel quickly revealed its singular character, so much so that Éric Pellé vinified it separately in 1981, marking the first single-vineyard bottling of the estate. Its deep Kimmeridgian terroir, streaked with veins of flint and facing east, naturally expresses finesse. On the palate, complexity unfolds: chalky texture, bright citrus, tension, and minerality. A wine of power and length, crafted to age gracefully.
Winemaking Notes: Direct pressing / Light settling / Natural fermentation in wooden vats / Aged on fine lees in the same vessels for 8 months / Total SO₂ < 50mg/L
Viticulture & Philosophy: Estate certified biodynamic / Preservation and ongoing development of old massal selections / Soil cultivation and natural cover cropping / Eco-grazing on part of the estate / Agroforestry within and around the vineyards / Composts made from manure sourced from neighboring farms
Soil: Kimmeridgian marl, clay-limestone with streaks of flint
