This east-to-west facing parcel ripens gradually, allowing for a staggered harvest. Between the rows, sheep and geese graze freely—the estate’s barnyard is right here, contributing to the vineyard’s natural balance. On this Kimmeridgian marl terroir, finesse takes on a chalky texture. Length, balance, freshness, and silky tannins shape a deep, dense, and generous wine, designed to pair beautifully with the table.
Winemaking Notes: Partial whole-cluster harvest depending on the vintage / 3–4 week infusion in wooden vats of varying sizes / Spontaneous fermentation with indigenous yeasts / Careful pressing in a vertical press / Aged in demi-muids and small foudres / Total SO₂ < 40mg/L
