Region: Jura
Appellation: AOC Arbois
Grape: 100% Savagnin
This wine, aged under a veil for six years, comes from our oldest vines of Savagnin on Jura’s marly soils. It reveals intense notes of lemon, green apple, almond, walnut, and spices. The palate is crisp and saline, with a long, elegant finish.
In the vineyard: the vines are grown organically. The soils are partially plowed before winter and remain grass-covered for the rest of the year. Marin use the Guyot-Poussard pruning method to respect the sap flow of the plants.
Vineyards: multiple sites with old vines 45years old +
Soils: Marly jurassic soil
In the winery: the grapes are hand-harvested and whole clusters are gently pressed in pneumatic presses. After the juice is transferred to barrels, spontaneous fermentation begins after a few days, thanks to indigenous yeasts. The white wines are aged on their fine lees. 6 years under veil.
